The seeds of most plants are rich in nutrients and can provide us with health benefits. Yet flaxseeds are also nutritionally unique and offer us health benefits not found across the board within the seeds food group. The nutritional uniqueness of flaxseeds features three nutrient aspects, and all three play a key role in the outstanding health benefits of this food....
Unique Nutrient Features of Flaxseeds
The first unique feature of flax is its high omega-3 fatty acid content. Among all 127 World's Healthiest Foods, flaxseeds comes out number one as a source of omega-3s! The primary omega-3 fatty acid found in flaxseeds is alpha-linolenic acid, or ALA. The ALA in flaxseed has found to be stable for at least 3 hours of cooking at oven temperatures (approximately 300F/150C), which makes it available after ground flaxseeds have been added to baked goods like muffins or breads.
The second unique feature of flaxseed is its lignans. Lignans are fiber-like compounds, but in addition to their fiber-like benefits, they also provide antioxidant protection due to their structure as polyphenols. The unique structure of lignans gives them a further health-supportive role to play, however, in the form of phytoestrogens. Along with isoflavones, lignans are one of the few naturally occurring compounds in food that function as weak or moderate estrogens when consumed by humans. Among all foods commonly eaten by humans, researchers rank flaxseeds as the number one source of lignans. Sesame seeds come in second, but contain only one-seventh of the total lignans as flaxseeds. To give a few further examples, sunflower seeds contain about 1/350th as many lignans, and cashews nuts contain about 1/475th as many lignans as flaxseeds.
A third unique feature of flaxseeds is their mucilage (gum) content. "Mucilage" refers to water-soluble, gel-forming fiber that can provide special support to the intestinal tract. For example, gums can help prevent the too rapid emptying of the stomach contents into the small intestine, thereby improving absorption of certain nutrients in the small intestine. Arabinoxylans and galactoxylans are included within the mucilage gums found in flaxseeds.
This combination of features—omega-3 fatty acids, high-lignan content, and mucilage gums—is a key factor in the unique health benefits of flaxseeds. Melt on medium low: 1/8 cup coconut oil, 1/8 cup butter, ½ cup coconut butter (in Natural Food section by almond butter etc.).
In bowl, mix: ½ cup unsweetened pumpkin puree, 2 tsp. pumkin pie spice mix, 1 ½ tsp. ground cinnamon, 1 tsp. vanilla extract, 2 Tbsp. powdered xylitol (I powder 1 cup at a time in a blender and store any extra in glass jar for later use), 2 heaping Tbsp. coconut flour, pinch of salt. Once blended, added melted ingredients above. Mix well. Let set to cool some and mix as you go if needed (may separate).
Coating: Mix powdered xylitol and toasted shredded coconut (spread onto cookie sheet in thin layer and toast in 300 degree oven for 5-9 minutes…..watch as not to burn. I do 2 cookie sheets and store extra for later use).
I use a Mellon Baller to measure out and place into coating to cover and than shape.
Than sit back and enjoy the burst of Fall in your mouth!
Make several batches and freeze. They freeze very nicely for up to about 3 months….if they last that long! :D

6 Kale leaves
Handful of spinach (pre-packaged works, but prefer fresh bunches)
4 celery stalks
1 Granny Smith Apple whole (only this type as all others have much higher glycemic index)
½ Lemon (lightly peel the yellow exterior, leaving as much of the white as possible)
½” of Ginger (finger thickness, increase a little if you can)
1” Turmeric Root (same)

6-8 grass-fed beef marrow bones
1/2 cup grass-fed butter, cut into chunks and softened
1 tsp. sea salt, or to taste
Freshly ground black pepper to taste (optional)
Preheat oven to 425 degrees.
Place bones on sheet lined with parchment paper, with the marrow side facing up.
Roast bones for 15-20 minutes, until marrow is soft.
Allow bones to cool and scoop marrow into a bowl.
Add marrow, butter and salt to a food processor and blend until thoroughly whipped.
Chill and enjoy!

Boil chicken, cut up onion, celery, green and red pepper, Brussels sprouts, zucchini, radish, tomato, allow to lightly simmer 45 min. Top of with minced garlic, cumin and black pepper, sea salt, small can of tomato sauce and cilantro and serve with lime
Try this for Easter Toasted Coconut Cheesecake
Toast Coconut (unsweetened shredded and flaked): Spread thin layer on cookie sheet; toast in oven at 325 degree for 5-8 minutes. Left over, store in glass container in pantry for 1 month or can be frozen.
Powder Xylitol: Can be done in a blender by giving it a few quick whirls until the consistency is like powdered sugar (I do extra and store for future use). Someone mentioned this can be done in a coffee grinder too. Give it a whirl.
•1 cup pecans
•1 cup finely shredded coconut, unsweetened
•3 tbsp powdered xylitol
•1/4 tsp salt
•2 tbsp melted butter
•1 & 1/2 lbs cream cheese (3 8-ounce packages), softened
•3/4 cup powdered xylitol
•3 large eggs, room temperature
•2/3 cup full fat coconut milk (canned), room temperature (I warm on stove to blend it, remove from stove measure and let cool before adding as not to “cook” the ingredients before going into oven)
•1/2 tsp vanilla extract
•1/2 tsp coconut extract
1. Preheat oven to 325F
2. In a food processor, nuts on high until coarsely chopped. Add coconut, sweetener and salt and process until mixture resembles coarse crumbs
3. Add melted butter. Stir to combine well. Press mixture firmly and evenly into the bottom a 9”springform pan
4. •Bake 12 to 14 minutes, or until just beginning to brown around the edges. Remove and let cool.
1. Reduce oven temperature to 300F.
2. In a large bowl, beat cream cheese on medium until smooth. Beat in sweetener until well combined. Beat in eggs one at a time, scraping down sides of bowl and beaters as needed. Then beat in coconut milk, vanilla extract and coconut extract until smooth.
3. Brush the sides of the springform pan with a little melted butter and then pour the filling over the cooled crust.
4. Place springform pan on a cookie sheet and place on the center rack on the oven. On the rack below, place a large baking dish filled with water.
5. Bake 1 hour 30 minutes to 1 hour 45 minutes, or until edges are set and center just barely jiggles when shaken. Remove and let cool completely. Run a sharp knife around the edges of the pan and remove sides. Cover with plastic wrap and refrigerate at least j3 or 4 hours.
Add whip cream layer and toasted coconut flake topping
